- 2 fennel bulbs, thinly sliced
- 3 oranges, segmented
- 50g black olives
- Olive oil, lemon juice, salt
Method
Thinly slice the fennel. Segment the oranges, reserving the juice.
Combine the fennel, orange segments and olives. Dress with olive oil and the reserved orange juice, season with salt, and serve.
