Sesame Asian Noodle Salad
A cold noodle salad with crisp vegetables in a sesame-soy dressing.

- 300g dried noodles (e.g. soba or spaghetti)
- 1 carrot, cut into matchsticks
- 1 cucumber, cut into matchsticks
- 2 spring onions, chopped
- 3 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- Sesame seeds
Postup
Cook the noodles, rinse under cold water, and drain. Mix with the carrot, cucumber and spring onions.
Whisk together the soy sauce, sesame oil and rice vinegar, and drizzle over.
Scatter with sesame seeds and serve chilled.
