- 60g walnuts, toasted
- Rocket
- Olive oil, balsamic vinegar, honey

Roast the beetroot in foil for 40-45 minutes until tender, then peel and slice.
Arrange the rocket on a platter, topped with the beetroot. Scatter with goat cheese and walnuts.
Drizzle with olive oil, balsamic vinegar and honey, and serve immediately.
