Mexican Street Corn Salad
Charred corn with lime, chilli and coriander - elote in salad form.

Ingredienti
- 500g corn kernels (fresh or frozen)
- 1 red onion, finely chopped
- 1 jalapeño, finely chopped
- 50g cotija or feta cheese, crumbled
- Fresh coriander
- Lime juice, mayonnaise, chilli powder
Preparazione
Char the corn in a dry pan or on the grill until lightly browned.
Mix with the onion, jalapeño and coriander. Add the mayonnaise and lime juice, and toss.
Top with cheese and chilli powder, and serve immediately.
