Torta Salata di Verdure
A savoury vegetable and cheese pie baked in a crisp pastry crust.

Ingredienti
- 1 sheet puff or shortcrust pastry
- 1 courgette, 1 pepper, 100g spinach
- 200g ricotta
- 3 eggs
- 80g parmesan, grated
- Olive oil, salt
Preparazione
Line a pie dish with the pastry. Sauté the vegetables in olive oil until soft.
Mix the ricotta, eggs and parmesan, then stir in the vegetables.
Pour into the pastry case and bake at 180°C (350°F) for 35-40 minutes until set and golden.
