A herby, spicy Thai chicken salad - laab style.

Ingrediente
- 400g chicken mince
- 1 shallot, thinly sliced
- Fresh mint and coriander
- 2 tbsp lime juice
- 2 tbsp fish sauce
- 1 tsp chilli flakes
- Toasted rice powder (optional)
Preparare
Cook the chicken mince in a dry pan, breaking it up as it cooks through.
Mix with the shallot, mint and coriander. Dress with lime juice, fish sauce and chilli flakes.
Scatter with toasted rice powder and serve wrapped in lettuce leaves.
