Pollo alla Cacciatora
Hunter's-style chicken: chicken pieces slow-braised in a tomato and wine sauce.

- 1 whole chicken, jointed
- 1 onion, 2 garlic cloves
- 200ml red wine
- 400g tinned tomatoes
- 100g black olives
- Rosemary, olive oil, salt
Preparare
Brown the chicken pieces in olive oil on all sides. Add the onion and garlic, sauté, then pour in the wine and let it evaporate.
Add the tomatoes and rosemary, cover, and simmer for 45-50 minutes.
Stir in the olives for the final 10 minutes and serve.
