Orecchiette alle Cime di Rapa
Puglian ear-shaped pasta with turnip greens, delicious on its own or with sausage.

- 400g orecchiette
- 500g turnip greens (or broccoli rabe), trimmed
- 4 garlic cloves, sliced
- 1 tsp chilli flakes
- 6 tbsp olive oil
- 2 anchovy fillets (optional)
- Salt
Valmistus
Cook the orecchiette in salted water, adding the turnip greens for the last 5 minutes so they cook together.
Heat the olive oil and fry the garlic, chilli flakes and anchovies until the anchovies dissolve.
Drain the pasta with the greens and add to the pan. Toss well and serve immediately.
