Roasted Pepper and Aubergine Salad (Escalivada)
A smoky roasted vegetable salad with aubergine and peppers - a Catalan classic.

- 2 aubergines
- 2 red peppers
- 1 onion
- Olive oil, garlic, salt
Elaboración
Roast the vegetables whole at 200°C (400°F) for 40-45 minutes until the skins blacken and the flesh is soft.
Peel and cut the vegetables into strips. Arrange on a platter, drizzle with olive oil and crushed garlic.
Season with salt and serve at room temperature.
