Steamed Pork Dumplings (Jiaozi)
Delicate steamed dumplings filled with juicy pork and cabbage.

Ingredients
- 24 dumpling wrappers
- 250g pork mince
- 150g Chinese cabbage, finely chopped and salted
- 2 spring onions, chopped
- 1 tbsp ginger, grated
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp shaoxing wine
Method
Squeeze the excess water from the salted cabbage and combine with the pork, spring onion, ginger, soy sauce, sesame oil and wine.
Place a spoonful of filling in the centre of each wrapper, then fold and pleat to seal.
Arrange the dumplings in a lined steamer basket, leaving space between each.
Steam over boiling water for 10-12 minutes until the pork is cooked through.
Serve hot with a soy-vinegar-chilli dipping sauce.
