Pappa al Pomodoro
A thick Tuscan tomato and bread soup, delicious hot or cold in summer.

Ingredients
- 800g ripe or tinned tomatoes
- 250g stale bread, cubed
- 3 garlic cloves
- 1L vegetable stock
- Fresh basil
- Olive oil, salt
Method
Sauté the garlic in olive oil, add the tomatoes, and simmer for 15 minutes.
Add the stock and bread cubes, and bring to the boil. Stir for 15-20 minutes until the bread fully absorbs the liquid and becomes a thick pulp.
Serve warm or at room temperature, topped with basil and a drizzle of olive oil.
